Inside the dairy, you watch the cheesemakers stretch the curd by hand in hot water and pinch off each ball, the gesture of mozzare that gives mozzarella its name. The visit ends at the table, with a tasting of mozzarella made that morning alongside ricotta, local vegetables and a glass of wine from the surrounding hills.
